Butter Chive Tossed Carrots

1 pound carrots, peeled and cut "penny" style
1/2 cup water
(when cutting carrots..taste them...if they seem a little enhance the flavor of the carrots. add your preferred sweetener...mine is liquid stevia)
I cook mine in my Pampered Chef micro cooker in microwave until tender.
Another option would be to boil them on stove top.

Drain. Set carrots aside.

2-3 TBS of olive oil
2 TBS Butter
3 TBS fresh chives

Heat the olive oil, butter add chives and carrots.
Toss together and serve warm.
